A restaurant phone rings hardest at exactly the moment nobody can pick it up. The receptionist takes the calls the floor cannot stop for — a table for twelve, a christening lunch, whether the tasting menu can go dairy-free, whether the upstairs room is free in November — and captures date, head count, site and dietary notes before routing it to the manager who owns that location.
